With my wife unfortunately away in Springfield, I decided to cook myself some dinner tonight. I found a recipe online for a clone of Long John Silver’s batter, which I whipped up.
I have to say, the following recipe is a very good representation of LJS’s batter:
LONG JOHN SILVER BATTER
1 egg white
3 tsp. baking powder
1 tsp. oil
3/4 c. water
1 tsp. salt
1 c. flour
Beat egg whites until stiff. Combine remaining ingredients and add to egg white. Dip fish/chicken in batter, let excess drip off; and deep fry 3 or 4 minutes per side.
Tasty.
